Where does Hoy Ka Noodle originate from?

In a province of Thailand, Pitsanuloke, there was a well known noodle stand that served hot noodles along the Naan River. Thai people would travel there after a long day of work to enjoy the soothing spices of the noodle soup. Patrons would sit on wooden planks with their legs dangling above the water as they enjoyed their meal before heading home. Hence the term Hoy (Dangling) Ka (Legs) Noodle.
